Breakfast Quesadillas

One of my favorite things to do when I'm hungry late at night is to troll the depths of the Tumblr food tag for pictures of delicious food. On one of those adventures, I ran across this spectacular breakfast recipe. Super healthy, super tasty, super easy.

Condensed version:
Ingredients: eggs, shredded cheese, tortillas, avocado, tomato, salsa
  1. Heat greased skillet, add lightly beaten eggs (prepare similar to making an omelet)
  2. Add half of your shredded cheese, top with one tortilla, loosen the edges.
  3. Using a dinner plate, flip the whole thing
  4. Add cheese and another tortilla to this side. Let it sit for a minute to brown tortilla 1, then repeat flip and brown tortilla 2.
  5. Slice it up with a pizza cutter and top with lovely things as you wish.
As we're writing this post, we've realized that this could be even better if we used one of the  non-traditional tortilla types like spinach or tomato basil. Easter weekend breakfast? I think so.
