I can sometimes trick myself with foods that are "fake" fried, which is relatively easy to accomplish with some Mrs. Dash, cornflakes, and nuts (mix together, dip item to be "fried" in milk or similar basting ingredient, roll item in the mix, bake.) or with Parmesan cheese and bread crumbs.
I also cheat sometimes. I've discovered that eating fried green foods alleviates some of my guilt about eating fried foods, so I'm more likely to indulge with fried pickles, fried okra, or fried green beans than anything else.
