Guacamole and Avocados

 
I absolutely love avocado. It tastes good with virtually anything. Need something to top off a sandwich? Add avocado! Need something to liven up a salad? Add avocado!

Accordingly, I also love guacamole. I wind up glaring at a lot of my friends every time we eat at Papa's and Beer because they will ask to have the guacamole left off their dish. I fuss every time because I know that I would willingly scoop it off their plate and onto mine and be a happy camper. I've learned though that no amount of glares will ever change that habit and have just started ordering my own side of the stuff.

That long winded intro amounts to: I made guacamole and it was yummy!

Small - one person sized - Batch:
  • 1 Avocado - peeled, pitted, and mashed (just use the potato masher. So much quicker)
  • 1/2 tomato - diced
  • 1 slice onion - chopped
  • tsp olive oil or lemon juice (so it stays green longer)
  • table blend Mrs. Dash
  • garlic powder
Also note, if you store your guac in a container with no room left for extra air and a really airtight lid, that will help with the discoloration as well (because no one likes brown guac even if it still tastes good).
